С. 5-6.The article presents the results of a comprehensive study on the impact of abiotic stress factors caused by global climate change on the formation of technological and biochemical grain quality indicators of winter wheat varieties bred at Poltava State Agrarian University. The author analyzes the dynamics of accumulation of protein, wet gluten, and essential amino acids under conditions of high-temperature stress and hydrothermal destabilization during the critical stages of grain filling and maturation. Special attention is paid to evaluating the adaptive potential and genetic plasticity of modern varieties (such as "Dykanka", "Vylshana", and others) in response to drought and air aridity. The study establishes correlation dependencies between the hydrothermal coefficient, soil moisture deficits, and final baking properties of the grain, including vitreousness and sedimentation value. The findings demonstrate that while severe drought limits overall yield capacity, certain genotypes exhibit high homeostasis, maintaining high-quality bread-making parameters even under stressful environmental conditions.
