dc.descriptionaterials and methods. A safe, effective and affordable enzyme preparation is chosen from literature sources in order to increase the number of functional groups in the raw material. It was necessary to prove the amount of enzyme preparation for efficient proteolysis subject to technological processes and economic expediency. Results.
