dc.description.abstract	У статті досліджено закономірності виникнення потоку речовини в м’ясі свинини під впливом електричного струму, теплового потоку від нагрівача та їх комбінованої дії. Встановлено, що вологовміст м’яса має істотний і нелінійний вплив на об’єм речовини, що переноситься в м’ясі під впливом електричного струму та теплового потоку. Запропоновані аналітичні залежності для визначення кількісних параметрів з урахуванням вологовмісту, площі та товщини м’яса, різниці потенціалів, величини теплового потоку та прикладеного надлишкового тиску.
