At slaughterhouses conducted a visual assessment of the degree of muscles development, measure of carcass weight and back fat thickness (6-7 thoracic vertebrae), but sex of an animal is not considered as well as lean meat percentage. At the slaughterhouse ‘Yubileinyi’, Dnipropetrovsk region of Ukraine, 160 hybrid pigs were slaughtered (Landrace x Yorkshire x Peitrain, Yorkshire x Landrace x Duroc) and evaluated according to both Ukrainian and European classification. For EUROP assessment the French device CGM was used which involves measuring between.last 3 and 4 thoracic vertebrae. According to Ukrainian classification all 160 carcasses were rated as the second category. The second category includes carcasses with weight from 47 to 102 kg and the thickness of fat from 10 to 30 mm at the level of 6-7 thoracic vertebrae. Test assessment of carcasses according to European system has the following classification: 39 heads - class S, 88 heads - class E, 28 heads - class U and 5 heads - class R. It was determined that the biggest part of slaughtered pigs were castrated; 116 heads, or 72.5%. Slaughtered female have the highest MLD thickness (63.2±0.33 mm) and lean meat percentage (60.52±0.38%) at the same time have the thinner back fat (14,9±0,13 mm). In whole animal group lean meat percentage was 58.14±0.26%. The problem of using alkaline catalysts is rapid deactivation under the influence of impurities present in the fatty raw material. The greatest influence is exerted by moisture and fatty acids. Transesterification of sunflower oil with increased mass fraction of moisture and acid value in the presence of potassium glyceroxide, which is more resistant to deactivating impurities, was studied. Oil parameters: peroxide value 0.18 ½ O mmol/kg, acid value 0.08 mg KOH/g, mass fraction of moisture 0.05%, crystallization temperature –18.38°C.Oil samples with mass fractions of moisture from 0.1 to 0.75% (obtained by adding water) were stored for two months under the following conditions: temperature (20±2) °C, air humidity not more than 70%. After storage, the acid value was measured in each sample and transesterification was performed. The efficiency of the process was assessed by the oil crystallization temperature. The maximum values of oil indicators at which the potassium glyceroxide catalyst is effective were established: mass fraction of moisture 0.4%, acid value 0.28 mg KOH/g. At the same time, the crystallization temperature of sunflower oil is –3.95°C, which corresponds to the maximum increase in the crystallization temperature of oil as a result of transesterification. The results obtained make it possible to effectively transesterify sunflower and other types of non-standard quality oils without preliminary treatment. Soapstock is a waste of the oil and fat industry, which is formed in the process of alkaline neutralization of oils. The processing of soapstock to obtain fatty acids is promising, since the disposal of waste is difficult and dangerous, and fatty acids are an industrially valuable product. Fatty acids obtained from soapstock are an available raw material for the production of fatty acid esters of low molecular weight alcohols, which are the basis of alternative biodiesel fuel. The influence of the conditions of esterification of fatty acids from sunflower soapstock (CAS Number 61788-66-7) with butanol (CAS Number 71-36-3) in the presence of an alkylbenzenesulfonic acid catalyst on the acid value of the reaction mixture was studied. This indicator reflects an increase in the content of butyl esters. The fatty acids used, obtained from soapstock by decomposition with sulfuric acid, meet the requirements of DSTU 4860 for first-grade fatty acids. The neutralization number of fatty acids is 186.0 mg KOH/g, the mass fraction of moisture and volatile substances is 1.7 %, the mass fraction of total fat is 97.5 %, the depth of cleavage is 67.1 % of oleic acid. Rational conditions for the esterification process have been established, which correspond to the maximum reduction in the acid value of the reaction mixture: duration is 12 hours, catalyst concentration is 3.5 %. In this case, the acid value of the reaction mass was 4.05 mg KOH/g. The product yield was 91.5 %. Product parameters: mass fraction of esters – 92.7 %, mass fraction of total glycerol – 0.20 %, mass fraction of moisture 0.04 %, density at the temperature of 15 °C – 840 kg/m3. O.; Шостя, Анатолій Михайлович; Усенко, Світлана ОлексіївнаPresented results of the comparative analysis of non-sexed and sexed sperm of the same Holstein bulls after defrosting considering: the concentration of spermatozoa in 1 ml, their motility, survival, the dynamic characteristics of the movement, the acrosome integrity (intactness), the level of microbial contamination. It has been established that the motility and survival of sexed sperm were lower by 15–20% compared with similar traits of non-sexed sperm. The sperm of the bull Vioris Sleeman HOCANM7817774 had the highest activity rate in non-sexed and sexed forms. This demonstrates the possibility of breeding bulls based on this quality trait. The experimental results indicate the necessity to improve the technology of freezing and thawing sexed bull sperm and the relevance of training specialists of breeding centers and farms in Ukraine.Item Perspectives of use of totai meat percentage as a selection criterion in pig industry of Ukraine(Wageningen Academic Publishers, 2015) Kravchenko, O. This tendency is taken into consideration by the pig industry which improves housing- and feeding technology. At the same time specialized genotypes, including imported animals from different countries, became more and more popular. Over the last 10 years the average daily gain in Ukrainian pig farms increased by 1.96 times. But due to an outdated payment system for the animals delivered to slaughterhouses one of the main criteria for the carcass quality assessment, namely ‘total meat percentage’ (TMP), is not evaluated. To analyse the carcass quality based on TMP and to prove the need of involvement of this trait into Ukrainian breeding programs 7,246 pigs from 12 farms in central Ukraine were slaughtered. The measurements o f TMP were done using CGM-device. The average weight of carcasses of gilts and castratcs was 88.38 kg and 89.03 kg respectively. The TMP o f carcasses o f gilts was 59.30% and o f castrates 57.60%. Despite the fact that according to Ukrainian classification system all carcasses were related to the 2nd class, a considerable variation o f total meat percentage was established. So, the average value of this trait in the worst 30% carcasses o f gilts and castrates was 50.00±1.22% and 48.50± 1.19% respectively while in best 30% - 64.50±0.76% and 64.00±0.91%. The difference between 30% best and 30% worst carcasses o f gilts and castrates was 14.5% and'l 5.5% respectively (P<0.001). Understanding the importance of trait TMP for efficiency of pig industry the implementation o f European payment system is needed as well as integration of this trait into breeding programs o f Ukrainian genetic companies.
