I.; Loza, Arthur; Getya, A. A.; Кравченко, Оксана Іванівна; Гетя, Андрій АнатолійовичThe existing Ukrainian system of classification of pork carcasses was established in the Soviet Union. At slaughterhouses conducted a visual assessment of the degree of muscles development, measure of carcass weight and back fat thickness (6-7 thoracic vertebrae), but sex of an animal is not considered as well as lean meat percentage. At the slaughterhouse ‘Yubileinyi’, Dnipropetrovsk region of Ukraine, 160 hybrid pigs were slaughtered (Landrace x Yorkshire x Peitrain, Yorkshire x Landrace x Duroc) and evaluated according to both Ukrainian and European classification. For EUROP assessment the French device CGM was used which involves measuring between.last 3 and 4 thoracic vertebrae. According to Ukrainian classification all 160 carcasses were rated as the second category. The second category includes carcasses with weight from 47 to 102 kg and the thickness of fat from 10 to 30 mm at the level of 6-7 thoracic vertebrae. Test assessment of carcasses according to European system has the following classification: 39 heads - class S, 88 heads - class E, 28 heads - class U and 5 heads - class R. It was determined that the biggest part of slaughtered pigs were castrated; 116 heads, or 72.5%. Slaughtered female have the highest MLD thickness (63.2±0.33 mm) and lean meat percentage (60.52±0.38%) at the same time have the thinner back fat (14,9±0,13 mm). In whole animal group lean meat percentage was 58.14±0.26%. Nowadays in Ukraine conducted work from the adaptation and implementation of the assessment system and payment of carcasses at slaughterhouses based on lean meat percentage of the carcasses.Item Covid-19 pandemic effects on food safety - Multi-country survey study(2021) Kodak, T.; Djekic, I.; Nikolić, A.; Uzunović, M.; Marijke, A.; Liu, A.; Han, J.; Brnčić, M.; Knežević, N.; Papademas, P.; Lemoniati, K.; Witte, F.; Terjung, N.; Papageorgiou, M.; Zinoviadou, K.G.; Dalle Zotte, A.; Pellattiero, E.; Sołowiej, B.G.; Guiné, R.P.F.; Correia, P.; Sirbu, A.; Vasilescu, L.; Semenova, A.A.; Kuznetsova, O.A.; Vrabič Brodnjak, U.; Pateiro, M.; Lorenzo, J.M.; Getya, A. M.; Шостя, Анатолій Михайлович; Usenko, S. O.; Усенко, Світлана Олексіївна; Rachynska, Z.; Viaskov, V.; Kostenko, I.; Glavatchuk, V.; Zygin, S.; Hmelnitska, Y.; Хмельницька, Євгенія ВікторівнаThe object of the study is the process of chemical transesterification of sunflower oil with increased mass fraction of moisture and acid value.Transesterification technology allows obtaining fats with the necessary physico-chemical properties without changing the fatty acid composition. The problem of using alkaline catalysts is rapid deactivation under the influence of impurities present in the fatty raw material. The greatest influence is exerted by moisture and fatty acids. Transesterification of sunflower oil with increased mass fraction of moisture and acid value in the presence of potassium glyceroxide, which is more resistant to deactivating impurities, was studied. Oil parameters: peroxide value 0.18 ½ O mmol/kg, acid value 0.08 mg KOH/g, mass fraction of moisture 0.05%, crystallization temperature –18.38°C.Oil samples with mass fractions of moisture from 0.1 to 0.75% (obtained by adding water) were stored for two months under the following conditions: temperature (20±2) °C, air humidity not more than 70%. After storage, the acid value was measured in each sample and transesterification was performed. The efficiency of the process was assessed by the oil crystallization temperature. The maximum values of oil indicators at which the potassium glyceroxide catalyst is effective were established: mass fraction of moisture 0.4%, acid value 0.28 mg KOH/g. At the same time, the crystallization temperature of sunflower oil is –3.95°C, which corresponds to the maximum increase in the crystallization temperature of oil as a result of transesterification. The results obtained make it possible to effectively transesterify sunflower and other types of non-standard quality oils without preliminary treatment. This will reduce the cost of production and increase the profitability of enterprises (depending on the indicators of non-standard raw materials).Item Evaluation of Milk Productivity of Cows by the Chest Width behind the Shoulders(2022) Bratyuk, V.; Stadnytska, O.; Khalak, V.; Gutyj, B.; Dudchak, I.; Slepokura, O.; Kuzmenko, L. O.; Усенко, Світлана Олексіївна; Shostia, A. M.; Шостя, Анатолій Михайлович; Ovsiannikova, T.; Falalieieva, T.; Marushko, L.; Semenko, Y.; Zygin, S.The object of the study is the process of esterification of sunflower soapstock fatty acids with butanol. Soapstock is a waste of the oil and fat industry, which is formed in the process of alkaline neutralization of oils. The processing of soapstock to obtain fatty acids is promising, since the disposal of waste is difficult and dangerous, and fatty acids are an industrially valuable product. Fatty acids obtained from soapstock are an available raw material for the production of fatty acid esters of low molecular weight alcohols, which are the basis of alternative biodiesel fuel. The influence of the conditions of esterification of fatty acids from sunflower soapstock (CAS Number 61788-66-7) with butanol (CAS Number 71-36-3) in the presence of an alkylbenzenesulfonic acid catalyst on the acid value of the reaction mixture was studied. This indicator reflects an increase in the content of butyl esters. The fatty acids used, obtained from soapstock by decomposition with sulfuric acid, meet the requirements of DSTU 4860 for first-grade fatty acids. The neutralization number of fatty acids is 186.0 mg KOH/g, the mass fraction of moisture and volatile substances is 1.7 %, the mass fraction of total fat is 97.5 %, the depth of cleavage is 67.1 % of oleic acid. Rational conditions for the esterification process have been established, which correspond to the maximum reduction in the acid value of the reaction mixture: duration is 12 hours, catalyst concentration is 3.5 %. In this case, the acid value of the reaction mass was 4.05 mg KOH/g. The product yield was 91.5 %. Product parameters: mass fraction of esters – 92.7 %, mass fraction of total glycerol – 0.20 %, mass fraction of moisture 0.04 %, density at the temperature of 15 °C – 840 kg/m3. The results obtained make it possible to obtain a high-quality base for biodiesel fuel using soapstock fatty acids under rational conditions.Item IMPROVING THE UNIT FOR MELTING CHEESE MASSES(2021-12) Bondar, M.; Skoromna, O.; Ponomarenko, N.; Tesliuk, H.; Honcharova, I.; Nedosiekova, N.; Shaferivskyi, B. O.; Шостя, Анатолій Михайлович; Усенко, Світлана ОлексіївнаTo determine the fattening and meat qualities of young white pigs of different intra-breed differentiation according to some integrated significative, to calculate the level of correlations between traits and economic efficiency of research results. Methods. Evaluation of young pigs for fattening and meat qualities was carried out taking into account the following indicators: average daily gain of live weight during control fattening, kg, age of live weight 100 kg, days, fat thickness at 6-7 thoracic vertebrae, mm, length of chilled carcasses, sm. Comprehensive evaluation of young pigs for fattening and meat qualities was performed according to the SI4 selection index and the Sazer-Fredin index.Item Perspectives of use of totai meat percentage as a selection criterion in pig industry of Ukraine(Wageningen Academic Publishers, 2015) Kravchenko, O. I.; Getya, A. A.; Кравченко, Оксана Іванівна; Гетя, Андрій АнатолійовичThe demand for lean pork is being increased in Ukraine for recent years. This tendency is taken into consideration by the pig industry which improves housing- and feeding technology. At the same time specialized genotypes, including imported animals from different countries, became more and more popular. Over the last 10 years the average daily gain in Ukrainian pig farms increased by 1.96 times. But due to an outdated payment system for the animals delivered to slaughterhouses one of the main criteria for the carcass quality assessment, namely ‘total meat percentage’ (TMP), is not evaluated. To analyse the carcass quality based on TMP and to prove the need of involvement of this trait into Ukrainian breeding programs 7,246 pigs from 12 farms in central Ukraine were slaughtered. The measurements o f TMP were done using CGM-device. The average weight of carcasses of gilts and castratcs was 88.38 kg and 89.03 kg respectively. The TMP o f carcasses o f gilts was 59.30% and o f castrates 57.60%. Despite the fact that according to Ukrainian classification system all carcasses were related to the 2nd class, a considerable variation o f total meat percentage was established. So, the average value of this trait in the worst 30% carcasses o f gilts and castrates was 50.00±1.22% and 48.50± 1.19% respectively while in best 30% - 64.50±0.76% and 64.00±0.91%. The difference between 30% best and 30% worst carcasses o f gilts and castrates was 14.5% and'l 5.5% respectively (P<0.001). Understanding the importance of trait TMP for efficiency of pig industry the implementation o f European payment system is needed as well as integration of this trait into breeding programs o f Ukrainian genetic companies.Item Quality of pig carcasses of surgical- and immunocastrated males slaughtered at different live weight(Wageningen Academic Publishers, 2018) Povod, M.; Kravchenko, O. I.; Getya, A. A.; Kodak, O.; Кравченко, Оксана Іванівна; Гетя, Андрій Анатолійовичeffectiveness of fattening. Traditionally Ukrainian pork producers slaughter the animals with live weight 100-110 kg but would like to raise the weight before slaughter, working with hybrid pigs. According to reports of some researchers the increasing of weight before slaughter causes worsening of carcass quality, especially in surgically castrated and entire males. As a solution the immunological castration can be taken into account especially for rising heavy weight pigs. This assumption has been investigated in presented research. The trial has been organized under the condition of commercial farm on hybrid animals (Yorkshire* LangrassxMaxgro). Two groups of pigs with 30 heads in each were formed (surgical and immunological castrated males). Surgical castration was done at the age 4 of days, immunological - by application of Improvac vaccine in accordance to the instructions for use. All animals were kept together and slaughtered at the same time but with different weights: from 100 till 120 kg. Carcass evaluation was made using Fat-o-Meater S71. The thickness of the backfat was measured at the level of 6-7 thoracic vertebra, and at sacrum. Carcass grading has been done using EUROP and Ukrainian scale. Sensory evaluation of carcasses after slaughter was performed. The results suggest that increasing of live weight before slaughter of immunocastrated males till 120 kg does not influence negative their carcass quality. Dressing percentage of carcasses did not depend on live weight before slaughter in both groups. Carcasses of immunocastrated males had lower backfat thickness measured at 6-7 thoracic vertebra: slaughter at 100 kg - by 2.8 mm; slaughtered at 120 kg - by 3.3 mm. After slaughter at weight 120 kg 70% of carcasses of immunocastrated males were graded E + U, while in the group of surgical castrated males such carcasses were only 50%. It was not detected critical level of boar odour in all slaughter weights.Item QUALITY OF THE POLTAVA MEAT BREEDING BOARS’ SPERM PRODUCTION DEPENDING ON THEIR USE REGIMENS AND UNDER THE EFFECT OF “HUMILID” FEED SUPPLEMENT(2021) Shostia, A. A.; Kodak, O.; Кравченко, Оксана Іванівна; Гетя, Андрій АнатолійовичConservation o f animal genetic recourses is a global issue and the reported rate of breed extinctions is of great concerns. In the livestock sector o f Ukraine genetic erosion concerns mostly local, native breeds which are replaced by a narrow range of high-yielding exotic breeds considered to have a competitive advantage in more intensive production systems. There is a big threat that Ukraine loses its national genetic recourses being replaced by breeds not well adapted to local climatic, environmental and technological conditions. Currently there are 6 native pig breeds in Ukraine: Mirgorodska (M), the Ukrainian white steppe (UWS), the Ukrainian spotted steppe (USS), Poltava meat (PM), Ukrainian meat (UM) and the Red white belt (RWBB). An analysis o f occurrence and geographical distribution o f Ukrainian pig breeds revealed for the years 2006-2012 a massive reduction in the number of breeding farms keeping those native breeds, namely: M: by 62.5%; UWS: by 72.7%; PM: by 68.4%; UM: at 43.5%; RWBB: by 41.2%. Most critical is the number of sows: Mirgorodska: 383 heads; Ukrainian white steppe: 334 heads; Poltava meat: 469 heads; and Ukrainian spotted steppe: 26 heads. Therefore the most urgent problem o f Ukraine, is the development and implementation of strategies to maintain its autochthonous animal breeds, but a conservation program cannot be established without reliable characterization and monitoring o f breeds. Breed certification, establishing definitions for what to be considered as pure bred, detection and timely elimination o f crossbred animals, are currently considered to be the most urgent tasks.Item The influence of feeding level on the growth of pigs depending on their genotype(Regul. Mech. Biosys, 2023) Vashchenko, P. A.; Zhukorskyi, О. М. ; Saenko, A. M. ; Khokhlov, A. M.; Usenko, S. O. ; Kryhina, N. V. ; Sukhno, T. V. ; Tsereniuk, О. М. ; Ващенко, Павло Анатолійович; Усенко, Світлана ОлексіївнаThe growth and development of pigs is determined by their genotype and environmental conditions (primarily the level of feeding), however, the number of works aimed at studying the complex influence of genetic and non-genetic factors in their interaction is currently insufficient. The purpose of our work was to estimate the effect of the MC4R genotype, feeding level and interaction of these factors on growth and backfat thickness of crossbred pigs and to investigate the possibility of correcting the melanocortin receptor gene polymorphism effect by adjusting the ration.Item USE OF COLLAGENASE IN TECHNOLOGY GERODIETETIC PRODUCTS(2014-03) Peshuk, L.; Halenko, O.; Budnyk, N.
